It truly feels like we are entering a new era in the world of food. The pandemic has heightened our focus on our health and wellness, the future of the planet and the role food plays in giving us comfort and rewards. We can see heaps of exciting new food trends popping up as an aftermath of the pandemic and we’ve got 3 of our favourites here to share;

Mushrooms – the wonderful fungi family has an abundance of varieties, flavours, shapes and sizes to choose from. No longer need we be restricted to the familiar button mushroom. There’s the Shiitake, Oyster and Enoki. These all bring the delicious umami taste to any recipe as well as great shape and texture. But these little beauties are also the unknown superfood. For years the mushroom has played an essential role in Chinese medicine, known to boost energy, reduce inflammation and support cognitive function, as well as being packed with antioxidants for anti ageing. Varieties such as Lion’s Mane, Coryceps, Chaga and Reishi offer a natural, botanical ingredient to support our wellness, oh and they taste great!

Fermented Foods – as our health continues to rise up in importance, great tasting foods with natural benefits are really heading off the starter blocks. Possessing good bacteria, these foods are probiotic rich proving great for our gut health. By including these in our diets, we can expect improved digestion, a boost to immunity and healthy weight management. And there’s plenty of great tasting foods to choose from including yoghurt, kefir, miso, tempeh, kombucha, kimchi and sauerkraut. The exciting part is how we can incorporate these into exciting, delicious recipes.

Mini indulgence – our restricted lifestyle over the past 18 months has meant we value the good things even more and consumers will be seeking ways to treat themselves in small ways. Historically, tough times have led to a rise in comforts and treats and we predict consumers will be looking for ways to maintain their health balance whilst also appreciating the good things Enter the mini treat. We predict it will be about intense indulgence on a smaller scale. Make it indulgent, but not too much. We’re in!
