Our Star Chef, Phil Dixon

 

Phil’s interest in fresh food was ignited at a very early age. Growing up, he watched and helped his grandfather tend to the family vegetable plot, where he learnt all about the growing cycle, watching an abundance of fruit and vegetables grow from a small seed. Understanding the craft of seasonal rotation where his grandfather took advantage of the different seasons, Phil observed how different vegetables responded to the varying conditions. This closeness to nature and the abundance of flavours that nature provides made a deep impression on Phil. He wanted to share these bountiful flavours with more people and learn how to combine them for the most mouth-watering effects. And so his career as a chef was born.

 

Using this passion for food, Phil trained as a chef and went on to hold chef positions in Michelin starred and multi rosetted restaurants both in the UK and internationally. Such is his skill, talent and attention to detail, Phil went on to hold three Rosettes for over 10 years as executive chef at various country house hotels across the UK.

It’s not just a career to Phil, as he spends much of his family time pursuing his passion, visiting local food markets and travelling far and wide to sample local cuisine. Often he will create a twist on a traditional recipe influenced by his travels or experiment with entirely new recipes, serving them up to family and friends. And if he can cook it on his Kamado grill, even better! Phil’s love for fresh grown produce hasn’t disappeared – he can often be found foraging amongst the hedgerows with his wife and daughter to pick the freshest, flavourful ingredients for his latest recipes!

 

Since joining Monty’s Bakehouse, Phil continues to bring his culinary vision and expertise to every project. Known in the kitchen for experimenting with new flavour combinations as well as his ability to take a unique, fresh look at culinary challenges it can be guaranteed Phil will create something which will delight the tastebuds! There’s never a lack of volunteers to sample his latest creations. And carrying on the baton of Phil’s grandfather, he loves to watch the next generation of talent grow; his former Sous Chef Adam Smith made it through to the finals of the ‘Chef of the Year’ competition. Go Adam!
